5 Ginger Desserts You Need to Make For Ed Sheeran’s Arrival

We were so happy when Ed Sheeran decided that he was well enough to continue his world tour. Especially for those who missed his first concert here, and refreshed the sales page a million times just to get those precious tickets. To celebrate our favourite singer’s return to KL, here are some ginger desserts you can make:

1. Peach ginger sorbet

We could really use some sorbet for this Malaysian weather.

3 frozen ripe sliced peaches
3/4 cup granulated sugar
3/4 cup water
2 teaspoon freshly grated ginger
1 tablespoon lemon juice

Mix the sugar, water, and ginger together on a slow boil, then leave it in the fridge overnight. Put the sugar syrup, frozen peaches, and lemon juice into the blender and blend it till it’s smooth. You can serve immediately or chill it for later.

2. Ginger snap cookies

It doesn’t get more Irish than this.

2 cups almond flour
1/4 teaspoon salt
2 teaspoon ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup erythritol
1/4 melted butter
1 egg
1 teaspoon vanilla extract

Mix the flour, salt, ginger, cinnamon, and erythritol together in a bowl. Mix the butter, egg, and vanilla extract in another bowl before adding it to the former mixture. Blend until a nice batter is formed. You can create your favourite cookie shapes with the batter, then bake it for 10-12 minutes in 177°C. Once the cookies turn golden brown, they’re ready to be served!

3. Ginger candy

We will never say no to candy.

680g sliced ginger
3 1/4 cups granulated sugar

Boil the sliced ginger in hot water over medium-high heat for 30 minutes. Drain and keep 3/4 of the water. Mix 453g sugar and the water over heat in a saucepan. Add the ginger slices in once the sugar has dissolved, leave it till the slices have become translucent. Let the ginger slices cool for 30 minutes, then coat it with the leftover sugar. Leave it for 3 hours before you serve.

4. Gingerbread spice cake

This recipe might look a little confusing, but it’s totally worth it!

1 3/4 cups softened unsalted butter
1 cup brown sugar
3/4 cup molasses
2 eggs
2 tablespoons grated ginger
2 teaspoons lemon juice
2 1/4 cups all purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon sea salt
1/2 cup boiling water
1/2 teaspoon baking soda
227g softened cream cheese
4 cups powdered sugar
Vanilla extract
1 tablespoon milk

First, mix the brown sugar and a cup of butter till it’s fluffy. Add in the molasses and mix well, then add the eggs to the mixture one at a time. Next, add the ginger and lemon juice, then mix well. Mix the flour, cinnamon cloves, nutmeg, allspice, and sea salt in a separate bowl; then pour them into the butter mix. Stir the baking soda in hot water before adding it into the batter slowly while stirring. Bake the batter at 177°C for 45 minutes. For the frosting, whip the remaining butter and cream cheese till it’s fluffy, then add the powdered sugar in slowly. Mix well before you add the milk and vanilla extract to taste. Spread the icing over the baked cake once it’s ready.

5. Ginger lemonade

This drink isn’t just tasty, but helps your body detox too!

2 cups water
1/2 lemon juice
2 tablespoons apple cider vinegar
2 teaspoons raw honey
1 inch sliced ginger

Simply mix everything in a glass – make sure you stir well so you get all the flavours together. Serve it as it is or over ice.
